1 green pumpkin or acorn squash cut in big chunks
3 large yams, thickly sliced
1 cup brown sugar
1 tbsp cinnamon powder
4 cups of water
I use green pumpkin for this recipe but you can use any other type. I prefer not to peel the pumpkin or yams, I like to get the extra fiber!
In a large pot add 4 cups of water, brown sugar and cinnamon, mix to combine. Add the pumpkin and yams to the pot. Make sure the water covers them (add more water if needed). Bring to a boil over high-medium heat. Lower heat, cover the pot and let simmer for about 25 minutes or until pumpkins and yams are soft to the touch. Let cool.
You can eat the caramelized pumpkins and yams as a side dish or make a delicious shake! Just put some in a blender, add the liquid caramel, a cup of milk and mix until smooth.
